PSL pandemonium is in full force right now, and everyone just can’t get enough of their Pumpkin Spice Chai Latte, myself included. What is it about pumpkin spice that we love so much? In Ayurveda, the warming properties from pumpkin spice are considered quite therapeutic and even recommended for colder weather periods. According to Ayurvedic medicine, our bodies go through a transitional phase in the Fall, which requires more chi or heat in the body to build immunity, which these spices provide. Is it possible that our bodies just naturally crave these spices in the Fall to prepare for the cooler temperatures?

Ayurvedic or not, this stuff is quite addictive and so easy to make. You’ll just have to make more of it cause the sweetness of the pumpkin and cinnamon with the spice goes together like vegan bread and butter. There is nothing like taking a nice hike in the trails with a hot mug of pumpkin spice latte. It’s delicious, give you a little pick me up with a bit of caffeine and sugar, it’s full of delicious nutrients to help muster through the cold weather. How could you resist that, right? If you’re looking for something that is a little more decadent, try it with some vegan whipped cream and caramel

The method is quite straight forward. Start by warming up your milk, but I would recommend not bringing it to a full boil because it can separate and make for a less pleasing experience. A slow simmer in a saucepan works well, then throw in all of your spices and continue simmering for 3 minutes, and you’re done!  Instant Pumpkin Spice Chai Latte goodness or I like to call it “happiness in a mug”. Pumpkin Spice Chai Latte

The sweetness of the pumpkin and cinnamon with the spice goes together like vegan bread and butter. There is nothing like taking a nice hike in the trails with a hot mug of pumpkin spice latte.

Ingredients

  • 2 tea bags of your favourite chai tea
  • 2 cups Plain, unsweetened almond milk or milk of choice
  • 6 tbsp Pumpkin purée
  • 2 tsp maple syrup
  • ¼ tsp vanilla extract
  • ½ tsp pumpkin spice blend
  • 2 Cinnamon sticks

Instructions

  • In a saucepan, add your milk, tea bags, maple syrup, vanilla, pumpkin, cinnamon stick, and pumpkin spice. Bring to a slow simmer for 2-3 minutes. Then serve with cinnamon stick.
