Apple Broccoli Salad with Maple Vinaigrette

This Apple Broccoli Salad is creamy, sweet, filling, and is just so finger-licking delicious. I had to hold myself back from licking the bowl. The coconut bacon is the perfect topping that complements this sweet salad with those yummy little bits of smokey “bacon”. Yum! 

Most of my recipes are usually made with seasonal fruits and veggies. I never hold back on these kinds of opportunities. Right before the frost hits, you have a variety of late summer/fall fruits and veggies at their peak freshness. After that first frost, these delicious fruits and veggies will either be coming from further down south and traveling longer distances or coming from greenhouses. Either way, they won’t taste the same. Before then, I like to fully benefit from the peak season cause it’s going to be a long winter. That’s why I used apples in this recipe. I bought a bag of apples from the farm and was looking for an excuse to eat them fresh, and this salad was the perfect opportunity. 

If you are someone who is working out, training, or even if you just do sports now and again, you’ll need to find a good healthy meal that will help your body recover from all the exercise, build new muscles and repair any damaged tissues. A balanced recovery meal is composed of carbs and protein to help your body with this process it needs to go through after a workout. This Apple Broccoli Salad has a healthy amount of both carbs and proteins, making it the perfect cocktail for a recovery. Corn is a starchy vegetable, and you add in the sweet apples, which are both full of healthy carbs, then combine that the protein from walnuts, and you’ve got yourself a cocktail for the perfect recovery meal. 

I love recipes like this that you could re-use it for other purposes. I made this salad with cauliflower and broccoli, but this dressing is so versatile, you can virtually pair it up with any vegetable. Use it as a sweet coleslaw dressing, or it is even thick enough that you could use it as a veggie dip at a party. It could also be a delicious veggie burger or hotdog sauce. It really is that delicious.

Ingredients
  

Salad Ingredients

  • 2 gala apples, cut into small chunks
  • 4 cups broccoli, cut into floret
  • 4 cups cauliflower, cut into florets
  • 2 cup walnuts, chopped
  • 1 cup corn
  • 2 tbsp coconut “bacon” see recipe link below in notes section

Vinaigrette ingredients

  • 1 cup vegan mayo
  • 1 tbsp apple cider vinegar
  • 2 tbsp lemon juice
  • 1 tbsp maple syrup

Instructions
 

  • Mix in all of your salad ingredients in a large bowl.
  • In a small bowl, mix in your vinaigrette ingredients and stir till well combined. Pour into salad and mix till well incorprated.
  • Garnish with coconut bacon bits and enjoy!
